Hope you are feeling better soon. I make a great fried chicken strip myself, using chicken tenderloins, egg (seasoned), flour (seasoned) and Italian seasoned bread crumbs. Fried in Canola oil, with a little olive oil added for flavor. If I used bigger chicken pieces I fry them first and than put them in the oven.
